Sea Food Chowder

This chowder is easy and quick to prepare and is always a big hit with my daughters.
You will need:

1 medium onion -cut in half lengthwise, then sliced
2 TB olive oil
3 cups water
1 can corn niblets
2 medium potatoes, peeled and diced
4 cups milk
1 cup chopped white fish fillet (whatever you have on hand: sole, halibut, etc)
