This chowder is easy and quick to prepare and is always a big hit with my daughters.
You will need:
- 1 medium onion -cut in half lengthwise, then sliced
- 2 TB olive oil
- 3 cups water
- 1 can corn niblets
- 2 medium potatoes, peeled and diced
- 4 cups milk
- 1 cup chopped white fish fillet (whatever you have on hand: sole, halibut, etc)
- 1/2 cup shrimp, chopped
- 1 can clams, with liquid
- salt to taste
- Place oil in large saucepan and add oinion. Fry until translucent.
- Add water, corn, potato and milk. Bring to boil, cover and simmer 10 minutes.
- Add seafood and salt. Simmer 10 minutes and remove from heat.
- Either serve immediately or cool and refrigerate and reheat later. This chowder tastes better after being refrigerated.
