Seafood Chowder

This chowder is easy and quick to prepare and is always a big hit with my daughters.
You will need:
  • 1 medium onion -cut in half lengthwise, then sliced
  • 2 TB olive oil
  • 3 cups water
  • 1 can corn niblets
  • 2 medium potatoes, peeled and diced
  • 4 cups milk
  • 1 cup chopped white fish fillet (whatever you have on hand: sole, halibut, etc)
  • 1/2 cup shrimp, chopped
  • 1 can clams, with liquid
  • salt to taste
  1. Place oil in large saucepan and add oinion. Fry until translucent.
  2. Add water, corn, potato and milk. Bring to boil, cover and simmer 10 minutes.
  3. Add seafood and salt. Simmer 10 minutes and remove from heat.
  4. Either serve immediately or cool and refrigerate and reheat later. This chowder tastes better after being refrigerated.
